Cornbread: modified from Betty Crocker
1
c yellow cornmeal
1 c flour (white, whole-wheat or chapatti)
2 Tblsp sugar
4 tsp baking powder
1/2 tsp salt
1 c milk
1/4 c butter or oil
2 Tblsp yogurt or sour cream (or vegan egg replacer)
Preheat oven to 450°, grease an 8x8x2 pan, mix ingredients, pour into pan bake 20-25 mins till golden.
Banana Nut bread: modified from Betty Crocker

1/2 c flour (whatever kind you like)
1c sugar(!)
3 1/2 tsp baking pwdr
1 tsp salt
1 c mashed banana (about 3)
3 Tblsp oil
3/4 c milk
2 Tblsp yogurt or sour cream
1 c nuts chopped fine
Heat
oven to 350° grease and flour a 9x5x3 inch loaf pan. Measure all ingredients
into large bowl, stir. Pour into pan, bake 55-65 mins or till toothpick or knife
comes out clean. Cool before slicing.
Kifli
(Hungarian crescent rolls) HG Sravana Mangalam Budapest, Hungary
1/2 ltr warm water 50 g fresh yeast (dissolve yeast with a pinch of sugar in the
warm H2O)
1kg flour
2 Tblsp salt
1 Tblsp sugar
100 g butter
Mix
all ingredients, knead till elastic leave to rise 1hr or till doubled knead
lightly then form crescents: take about 1/2 kg of dough at a time and roll into
a big circle about 1 inch thick, cut into 8 wedges, roll out each wedge thick at
the blunt end and gradually thinner at the point. Roll into a crescent keeping
the point on the bottom, immediately brush with milk or cream or yogurt to keep
them from drying out. Let rise about 15 mins or as long as it takes to make the
next tray, then bake in moderate-high oven.
Tomato Chutney original Hare Krsna cookbook

lbs tomatoes skinned and cut into pieces
2 tsp salt
2 Tblsp ghee
1 tsp crushed red chilies
1/2 tsp cumin seed
1 tsp grnd coriander seed a pinch of sugar
Chaunce
cumin and chilies, add tomatoes and coriander boil till pureed, you can run it
through the food processor if you want really ketchup-y consistency, add salt at
the end.
Green Tomato Chutney original Hare Krsna cookbook

quarts green tomatoes 1/4ed
1 c chopped green pepper
1 tsp cumin seed
1 tsp salt
2 tsp turmeric
1 c golden raisins
1/4 c ghee
Heat
ghee fry cumin till browned, add peppers, fry a few seconds, add tomatoes and
turmeric cook on med. heat. Add raisins and salt (do not over- cook).
Apple
chutney
5 lbs apples peeled and cored
1/2 c H2O
1/4 c butter
2 Tblsp dry red chilies crushed
1 tsp grnd nutmeg
1/4 tsp grnd cloves
1 tsp turmeric
1 tsp grnd ginger
1 tsp grnd cinnamon
4-6 c sugar
Cook all ingredients except sugar till apples are mushy then add sugar and cook
till glazed and shiny. Don't let the sugar burn...
Banana Chutney

bananas
1 inch piece of tamarind
1/4 tsp nutmeg
1/4 tsp cinnamon
3/4 c sugar
1/4 tsp grnd cumin
1/4 tsp grnd ginger
1/4 tsp cayenne pepper
1/4 tsp grnd black pepper
Soak tamarind in 1/2 c hot water, strain out pulp and discard the seeds and fibers. Mash up all ingredients, mix well and serve cold.
