Carrot Sandesh

Hare Krishna!
I just wanted to share with you a recipe I tried at New Goloka, North Carolina. It came out pretty good.
Carrot sandesh (8 pieces)
2 cups of curd, pressed but not too dry
2 tablespoons of butter
1 carrot, grated
1 cup of sugar
1/2 teaspoon of cardamom
1/4 teaspoon nutmeg
Cook the carrot in butter until soft, then add 1/2 cup of sugar, cardamom, and nutmeg, and cook until golden brown. Set it aside until cool.
Knead the curd with 1/2 cup of sugar, until smooth and creamy, then knead in the carrot mixture until well mixed, roll into 8 balls, or press on a tray and cut into squares. This recipe is simple and nice!
